Heart-Shaped Pancakes with Blueberry Syrup

Pancakes with Blueberry Syrup - Smell of Rosemary.
Don't we all love pancakes? This is a simple and basic recipe. To make it special I made them heart-shaped for Valentine's Day.  I added some fresh blueberries for their nutritional value and excellent taste. For a little variety, flavor your syrup with different berries, including sliced strawberries, blackberries, and raspberries.

1 cup of all-purpose flour
2 teaspoons of baking powder
Pinch of salt
1 tablespoon of sugar
1 cup of milk
1 large egg
2 tablespoons of canola oil
1 cup real maple syrup
1 cup fresh blueberries
1 tablespoon of butter

In a large bowl, mix flour, baking soda, salt and sugar in a medium-sized bowl. Whisk lightly milk, egg, and oil. Pour milk mixture to flour mixture, and mix together until combined.

Heat a large nonstick pan on medium high heat. Spray pan with canola oil. Place heart-shaped pancake forms, and spray it with canola oil as well. Using a 2 tablespoon measuring cup, or a tablespoon, pour 2 tablespoons of batter into each pancake shape. Cook on medium high heat until edges appear dry and top of the pancake is bubbly. 

Remove pancake shapes from the pan. Using spatula flip pancakes over, and continue to cook for another minute or two, until they are done.

In a medium saucepan heat syrup and blueberries, until very hot, but not boiled. Add 1 tablespoon of butter, mix until melted. Serve over pancakes.
