Light Chocolate Cupcakes

 
Light Chocolate Cupcakes - Smell of Rosemary.
 
Shall we bake something sweet?  These particular cupcakes are quite simple to make and delicious. They have a creamy texture and are full of a rich chocolate flavor. They are a great choice to finish any Sunday dinner.

Cupcake Ingredients
 
4 ounces of unsweetened chocolate
6 tablespoons of unsalted butter
3 large eggs
½ cup of sugar
3 large egg whites
2 tablespoons of all-purpose flour

All ingredients must be at room temperature.
 
Line a standard muffin pan with twelve paper liners and preheat the oven to 350oF.
 
In a large heatproof bowl combine butter and chocolate.  Place it over just-simmering water and heat until melted.  Make sure the bowl is not touching the boiling water.  Stir until smooth and completely melted.

Carefully remove the bowl from the heat and let stand for 5 minutes.  Using a whisker, stir in eggs, sugar and flour until well blended.

In a separate bowl, beat egg whites with electric mixer on high speed, until stiff and glossy.

Fold the egg whites into the chocolate mixture just until combined.  Spoon the batter into prepared paper cups and bake them for 12-14 minutes.

Cool the cupcakes completely in the pan and then remove.

Chocolate Whipped Cream

Ingredients
 
2 cups of cold heavy cream
1 cup of sifted powdered sugar
½ cup of sifted unsweetened cocoa powder

Whip the cream in a stand mixer until it starts to thicken.  Sift in the sugar and cocoa powder and continue beating until it stands in stiff peaks.  Use right away or refrigerate.

Using a pastry bag, place the chocolate whipped cream over the cupcakes.  Recipe  makes 12 cupcakes.
