Grilled Citrus Chicken with Melon Salsa

This refreshing summer dish will make any gathering special. It is easy to prepare, very low in fat, healthy and delicious to eat. The sweetness of the watermelon and cantaloupe spiced with jalapeno peppers complements the grilled citrus chicken. With an abundance of fresh fruit and vegetables in local markets, this dish will be a summer favorite. You can prepare salsa ingredients in advance, and mix them 15 minutes before serving, for maximum freshness. I know you will enjoy this colorful, delightful dish.      
  

Ingredients for Melon Salsa

2 cups diced watermelon
1 cup diced cantaloupe melon
½ cup peeled & seeded cucumber, diced
½ cup red bell pepper diced
½ cup chopped cilantro
1 to 2 jalapeno peppers, finely diced
2 green onions thinly sliced
Juice & zest from 1 lime, plus more juice to taste
½ teaspoon salt
¼ teaspoon black pepper

In a large bowl, mix all ingredients for salsa: watermelon, cantaloupe, cucumber, bell pepper, green onions, cilantro, and Jalapeno pepper(s). Add lime juice and zest, and salt and pepper. Toss all ingredients gently.
 
 

 Ingredients for Grilled Citrus Chicken

4 chicken breast halves
Juice and zest from half lemon
Juice and zest from 1 lime
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper

 In the large mixing bowl combine lemon and
lime juice and zest, olive oil, and salt and pepper.

Saturate chicken breast in marinate

and let it sit for 15 minutes.

Place chicken on preheated grill, and cook for 12 to 15 minutes, turning once. Internal temperature should reach 165 degrees F, and both sides of the chicken should be lightly charred. When chicken is cooked, place it on the plate, and cover with aluminum foil; this process will allow the juices to distribute evenly.
